Gerry's Bar Cake

 

1 cup of mixed fruit or sultanas or apricots or dates & walnuts

1 tablesp butter

1 cup of water

½ cup sugar

1½ cups of self raising flour

Maybe, chop the fruit to the size you prefer

Boil all the cake ingredients except the flour for 2 minutes

Allow to cool for 10 minutes

Add self raising flour

Cook in loaf tin @ 180ºC for 30 minutes
