Parsnip Soup |

|
3 large parsnips diced |
½ stick celery chopped |
|
1 small carrot diced |
½ lemon |
|
1 piece root ginger sliced |
1 teasp pepper |
|
2 large brown onions diced |
large pinch of salt |
|
1 small clove garlic crushed |
3 to 4 cups of vege/chicken stock |
|
1 tomato halved |
garnish: finely chopped chives |

Sweat onion, carrot, ginger & garlic in butter for 10 mins
Add parsnip, tomato, celery, lemon, S & P, cook further 10 mins stirring often
Add 3 cups stock, cover & simmer 40 minutes
Remove lemon. Puree ingredients
Heat soup, add extra cup of stock if required
