Quinces - Persian Style

 

 

quinces

1 strip lemon peel

2 cups liquid

1 strip orange peel

1 cups sugar

handful of sultanas

 

                        ΘΘΘΘΘ

Peel and cut quinces into slices

Cover with water and simmer until soft and ruby-pink

Drain & reserve liquid.  For 2 cups of liquid add 1 cup water

Dissolve sugar, add lemon & orange peel, add quinces again
and simmer 30 - 45 mins.

When cooked, add sultanas and allow time to soak
