Rhubarb Pancake |

500 g rhubarb |
4 tablesp butter |
|
2 eggs |
1½ cups of flour |
|
4 teasp sugar |
3 cups milk |
| pinch of salt |

Clean & scrape rhubarb, cut into pieces & wash
Melt butter, saute rhubarb for a few mins, pour into greased oven-proof dish
Beat together eggs, sugar, salt, flour & milk & pour this batter over the rhubarb
Bake
190C - 200C. After about 25 mins; when it's nearly done, sprinkle with
a thin layer of sugar (Demerara gives extra crunch and flavour)
and bake further 5 mins.
Serve with cream and/or ice cream
