Zucchini Slice


Serves: 8

 

2 - 3 cups grated zucchini

3 - 4 eggs

1 cup grated pumpkin

1 cup SR flour

1 cup grated potato

¼ cup oil

1 cup grated cheese

salt & pepper

3 – 4 rashers bacon, chopped

 

1 small onion, chopped

Actually, you can use any veggies, grated to give 4 - 5 cups
(I have been known to produce a zucchini-less slice!)

Mix veggies, cheese, bacon & onion, then flour, then eggs, then oil.

Spread mixture into an oiled Swiss Roll tin.

Bake 350F / 180C for ¾ hour or longer. Check with a skewer, like a cake,
to see if it’s cooked.

As a meal: Serve with salad and crusty bread.

As finger food: Cut into rectangles then in half for long triangles.
